The author begins by discussing the concept of the protein minimum, the smallest amount of protein an animal needs to maintain its nitrogen equilibrium. They then describe their experimental methods, which involved feeding rats a diet of purified protein, starch, lard, and inorganic salts. They varied the type of protein in the diet and measured the rats' weight, food intake, and nitrogen balance with the aim to determine which proteins were most effective in supporting growth and preventing weight loss. The author found that casein, the protein found in milk, was the most effective protein for supporting growth and preventing weight loss in rats. They also found that the addition of certain inorganic salts to the diet was essential for maintaining nitrogen balance.
