Les textes s'interrogent, en particulier, sur l'importance que la « nourriture » a toujours revêtue au sein de ces littératures et des communautés dont elles sont l'expression. Il s'agit d'enquêter sur la relation entre nourriture et identité dans le contexte postcolonial et de porter une attention toute particulière aux processus à travers lesquels la nourriture est très souvent devenue une alliée dans la lutte pour la reconnaissance de tous les anciens pays colonisés à travers le monde.
