Die für Lebensmittel verwendeten pflanzlichen Öle und Fette werden aus Ölpflanzen oder Ölsaat durch Pressung oder Extraktion mit Dampf oder Lösungsmitteln gewonnen. Raffination und damit Entfernung unerwünschter Inhaltsstoffe macht die Fette für den Menschen nutzbar. Margarine ist ursprünglich tierischer Herkunft gewesen, wird heutzutage aber durch Hydrierung (Fetthärtung) der C=C-Doppelbindung(en) in den Fettsäureresten pflanzlicher Öle (Sonnenblumenöl, Rapsöl) gewonnen.
