Añadir al carritoTaschenbuch. Condición: Neu. Neuware - Milk is a nutritious food item with various beneficial properties and has a long tradition in nutrition, having been part of human diet for thousands of years. The composition of milk varies among different species, and milk quality is affected by several factors, i.e., season, climate, feeding management, and stage of lactation, as well as heat-treatments and technological processes.Milk is a valuable source of bioactive components and its role and function in human diet has been increasingly investigated by epidemiological and experimental studies. Consumption of milk is influenced by several variables, i.e., sex, age, ethnicity, and other cultural factors, and specific recommendations vary from country to country. This book includes original researches and review papers, and provides an overview of the nutritional composition and profile of the bioactive components of milk, its variation, and its impact on human diet.

Añadir al carritoTaschenbuch. Condición: Neu. Druck auf Anfrage Neuware - Printed after ordering - Of all food products dairy foods have the most potential concerning functional foods. Therefore, there is a tremendous amount of interest in value-added milk products and the identification of components in food which have health benefits. Bioactive Components of Milk provides an overview of these derived components and their diverse activities including: the stimulation of beneficial microflora, alerting the immune system to the presence of potential pathogens and allergens, binding and eliminating toxins, etc. The book is divided into four parts. The first part focuses on bioactive milk lipid components, which very widely among mammalian species. The second part describes different aspects of biological active colostrums and milk proteins and their derivatives, with special concern on species specific effects. The third part reviews the production of recombinant human proteins in the milk of livestock animals - including ethical issues - and the aims of altering milk composition for the benefit of both the animals themselves and the consumers. The final part focuses on the influence of ruminants nutrition on the biological activity of milk.

Añadir al carritoTaschenbuch. Condición: Neu. Druck auf Anfrage Neuware - Printed after ordering - Although breast-feeding has long been associated with lowered infant morbid ity and mortality from infectious disease, until relatively recently little was known regarding the individual components of human milk aside from their nutritive func tions and the presence of secretory antibodies. Over the last 40 years, and especially over the last decade, evidence has been growing that human milk contains a large number of materials that are bioactive and that are not found in artificially formu latedinfantdiets. Disparatelinesofresearcharecurrentlyproducingsurprisinglylong listsofnewlyrecognizedhumanmilkcomponents-antimicrobialsand immunomod ulators, includinganti-inflammatoryagents, antioxidants, cytokines, andhormones with biological activities that relate to pathogenesis, inflammation, development, metabolic regulation, and other functions. The sum of all of these biologically active milk components may account for the strong protection that human milk affords nursing infants. Strictly speaking, most components of human milk could be considered bioac tive, since nutrients are bioactive by definition. A major emphasis of this book, how ever, is on defining what is known about components of human milk that inhibit common pathogens of the infant, those that have hormonal and/or cytokine activity, those that have immunomodulatory and/or anti-inflammatory activity, xenobiotics, and nutrients that are uniquely essential to early development. The topic of bioactive substances in human milk was explored in depth at the th 8 International Conference of the International Society for Research on Human Milk and Lactation (ISRHML) held at Plymouth, Massachusetts, October 25-29, 1997. This book contains the proceedings of that conference.
