This book, while dealing in a broad way with the prehistory of brewing, and the medieval period, is more concerned with the technical changes which led the industry into its present form; most of these changes, up to the late nineteenth century, took place in Britain and so the British Brewing industry looms large in the description. But developments in the United States, Germany and elsewhere on the continent of Europe, all have their place. The author has researched early treatises from the beginning of the eighteenth century and later, and has cast some new light on the origin of porter brewing, which was central to the large scale development of the industry. From his own acquaintance with brewing patents, he has followed the various inventions which had the effect of revolutionising the industry in the last hundred years. Beer legislation has always been related to brewing practice and this too has been reviewed. The book is written from the point of view of a technical brewer, rather than an economic historian, and as such is a pioneer effort in the field.
