Approximately 107 sides very neatly filled out, remainder blank. With attractive and varied rubricated headings in capitals to each section, and additionally with six attractive coloured original drawings of soup (showing a tureen), fish (showing a goldfish bowl), Meats (showing cows) and so on (see photos). The respective sections are as follows: Soups (18 recipes); Sauces (20 recipes); Fish (8 recipes); Chicken a la Crème (4 recipes); Poultry (6 recipes); Meats (20 recipes); Chicken Salad (2 recipes); Entrees (10 recipes); Vegetables (12 recipes); Pickles (15 recipes); Catsup (7 recipes); Beverages (4 recipes); bread and yeast (6 recipes); Muffins (11 recipes); Pastry (9 recipes); Puddings (33 recipes); Custards and Creams (10 recipes); Cakes (33 recipes); Jellies and Preserves (five recipes); Miscellaneous (blank). The recipes themselves are rather varied, with an occasional international flavour such as Maryland Noodles; White Soup (source: Parkes House, Boston); Ochra Gumbo; Indian Curry Sauce; Fish a la Normandie; Gumbo Fillet; French bread; Pennsylvania Flannel Cakes; Dixie Biscuits; Washington Pie; Nurenburg Pudding; Indian Pudding; Boston Apple Pudding; Bavarian Cream; Charlotte Russe. The source is occasionally given Professor Bott provided several recipes; as does Mrs Douthitt herself. The several American recipes are also unusual to have, and it is possible that Mrs Douthitt was from an American family. It is also not clear how the book functioned as a fund-raiser for the hospital, as the recipes are not especially oriented toward the ill, but it is clearly intended to be attractively presented and could conceivably have been a manuscript that was intended to be published and sold as a printed volume, with the revenue going to the hospital. However, we have been unable to locate any printed version. It appears that the manuscript is not quite finished, so presumably the compiler intended to add a few further recipes before putting it to its purported use. A most unusual and intriguing item.…

Covers soiled, ink stain to head of lower cover, corners bumped, rubbed. Internally lightly browned, a few page corners turned, a few pen trials and mathematics to a few of the blank pages and lower pastedown, several pages excised or partly excised. With the name Theophilus Clements and the date of March 8th 1815 to upper cover, and another name and later (1857) date to front pastedown. A collection of various recipes, receipts and medical receipts, predominantly in the same hand, but with others as well. The receipts include 'To clean brass and copper', 'To take rust from iron', 'Blacking', and 'To Distroy (sic) Mice and Rats'. The recipes are mainly for cakes and wine, including 'Raspberry Vinegar', 'Calf's Foot Jelly', 'Black Currant Wine', 'To Preserve Cucumbers', 'Ginger Cakes, 'Shrewsbury Cakes', 'Blancmanges', 'Arrow Root Pudding', 'Ginger Wine', 'Orange Wine', 'Rich Plumb (sic) Cake', 'Apple, Potatoe (sic), and Lemon Cheesecakes', 'Bread Without Yeast', 'To Preserve Rhubarb', 'Currant, Gooseberry, and Raspberry Wine', and 'A Very Good Cake'. The medical receipts include a remedy for 'Weakness and Decline', 'Bitters for a Weak Stomach', 'Receipt for the Dropsy', 'For a Cough', 'Chilblains', 'A Cure for Boils', 'For a Sprain', 'Excellent Pills for a Headache', 'Cure for Piles', 'Remedy for Rheumatism, Lumbago', 'Whooping Cough', a 'Cure for Cholera', and an 'Ointment for Cancer', which involves the green leaves of broad beans. A few manuscript recipes are loosely inserted, from elsewhere, including one for a 'Lemon Sponge', a 'Marrow Pudding', and an 'Elder Wine' Size: 4to. Manuscript.…

Packed with recipes, many of which named for their originator: Sir John Broughton's Ginger Beer; Mrs Smyth's recipe for potted herrings, as well as some unusual fare: 'a wholesome beverage for the summer months', 'to preserve lettuce stalks as ginger', Adelaide Toast (fat saturated and topped with ham), and the extraordinarily meat-rich 'Yorkshire Pie': 'take a goose, a hare, a rabbit, a tongue, a pheasant, a brace of partridges and a chicken. wrap them all up in the goose, veal, shin of beef, calves feet and fat bacon.'.…

Very clean and legible nineteenth-century manuscript book containing at least a couple of hundred recipes, with an emphasis on inexpensive and filling fare: hashes and minces made with leftovers: cold potato croquettes; curried beef (cold meat cookery); Irish soup; stewed Spanish onions; mutton; whiting fried; minced ham with poached egg; omelettes. While domestic economy reigns, it stretches to include desserts such as apple foam, cream pie, soufflé, marmalade cake and coconut biscuits, as well as 'an excellent way to make coffee'. …

Mrs Simpson's recipes include wines and jellies, flummeries, oyster omelette, Oxford dumplings, Adelaide sandwiches, Dutch sauce, German puddings, 'pink colouring for sweets', Alderman's feast, giblet soup, how to stew a cod's head, whiggs, punch and cyder cup. Medicinal and household recipes to rear. Many are named for their originator or donator. Inserted sheets include correspondence on headed paper, and a recipe for pot pourri.…

Likely the work of Harriet Amelia Simpson (1816-77, née Silvester) of Liverpool, who in an immaculate hand transcribes numerous recipes (indexed according to type) for meat, game, fish (sturgeon, eels (to kill instantly!), carp, salmon, brill, herrings), vegetable dishes, soups, sauces, gravies, preserves, pickles etc. These include 'stubble goose', 'porker's head', 'turtle', 'Norfolk dumplings', 'ox palates', 'jugged hare' and 'seed water'. The reverse of the book includes medical remedies including canker, consumption, heartburn, fits, cancer, toothache, impurities in the blood, worms in children, and warts, as well as items for the home such as blacking, ink, and paints.…

Añadir al carritoManuscript notebook, neatly legible text (just over half the leaves in use); some toning and soiling, but internally clean, pp. [80] (170 x 200 mm), brown paper backed boards, marbled edges and endpapers, title by hand to upper cover; a little shaken and browned, with the upper joint starting; ownership inscriptions and the odd biographical detail within the text (see below), good. A neatly written and fully indexed mid-nineteenth-century recipe book. Mrs. Heek's go-to recipes include soup maigre, bath buns, Irish sauce, 'souflee' potatoes, Seville orange tart, puddings (Irish, Genoese, Alderman - a variation of Bakewell tart using apricots), 'German Pie' (beef and pork sausages, liver, large oysters with their juice, and cayenne pepper), home remedies, and a method for preserving eggs. Loose sheets feature recipes for parsnip wine (with a horseradish variant for those who favour something spicier), various icings, and raspberry vinegar. The very different addresses in the front of the book - 30 Pudding Lane and 22 Upper Brook Street - presumably represent Heek's places of lodging and work respectively. She was the cook for William Battie Wrightson M.P., (1789-1879) of Cusworth Hall in Doncaster, who had 22 Upper Brook Street as his London residence from 1841 until his death. A later addition in a different hand (a recipe for knitted woollen slippers), suggests a later owner in the West Midlands.
