Xavier Mathieu is chef at the Hostellerie Le Phébus, a magnificent Relais & Chateau located in Gordes (Provence, France), in the Luberon. He has one Michelin star and cooks a subtle, flavourful Mediterranean cuisine that is profoundly anchored in his native Provence.
