This textbook has been designed to fulfil the criteria set down in the Project 2000 curriculum for the study of nutrition and dietetics relating to the clinical nursing practice. The text explores the fundamental concepts of nutrition and dietetics and examines the principles of nutrition as they relate to the promotion of health and the management of disease. It examines the significance of food and eating habits in the context of health and disease. The dietary management of major diseases amenable to dietary intervention forms the core of the book. The text takes the student nurse through the formulation of a healthful diet for the normal subject to the more sophisticated aspects of dietary intervention in clinical practice. The subject matter is presented in modular format. Modules are case-driven and study activities are provided throughout the text requiring the student to actively seek and explore relevant data.
