Paperback. Condición: New. Print on Demand. This book analyzes the efficiency of different layouts and methods in the produce sections of retail food stores, and explores produce weighing at checkout counters. The author studied the time spent by customers in produce departments and their average purchases. The results found wider aisles significantly reduced congestion in these departments, and that produce sold best when on display near the front or sides of aisles or on end caps with alternating extensions. Customer service stations located at the end of shopping routes or next to high-traffic sections of produce displays were found to have lower wait times and higher sales than those in less accessible areas. The author also discusses the advantages of low-platform scales and automatic staplers in checkout areas to speed up weighing, and the benefits of combining the recording and bagging functions to eliminate an extra step. These time-saving methods and layout tweaks give practical insights on how to maximize sales and minimize labor costs in the produce department, making this book valuable for both produce managers and owners of retail food stores.
