Cut pork in small pieces and try out; add onion and cook five minutes, stirring Often that onion may not burn; strain fat into a stewpan. Parboil potatoes five minutes in boiling water to cover; drain, and add potatoes to fat; then add two cups boiling water; cook until potatoes are soft, add corn and milk, then heat to boiling point. Season with salt and pepper; add butter, and crackers Split and soaked in enough cold milk to moisten. Remove crackers, turn chowder into a tureen, and put crackers on top.-mrs. Isa belle J. Drain the liquor from 2 cans of corn (or use 12 green ears) and chop the kernels fine. Put them over the fire with a pint of water and simmer for 15 minutes. Strain through a fine strainer and return to the fire. Season with salt, pep per and a heaping teaspoon of sugar. Cook together two tablespoons each of butter and flour and when they are blended, pour upon them 3 cups of milk and a cup of cream to which a generous pinch of baking soda has been added. Stir until smooth and thick, add the corn puree, and as soon as the mixture is scalding hot, take from the fire and pour gradually, beating all the time, the beaten7 yolks of 2 eggs. Serve immediately - kate mann baker.
