In publishing this book the compiler has endeavored to give only a few choice, thoroughly tested receipts in every department of cooking.
Proceeding upon the maxim that "quality is more desirable than quantity," she has eliminated many receipts that are good, but not as practical, or else very similar to others given, and has chosen only those she has found to be the best and prepared in the best way.
The compiler has selected, as nearly as possible, those receipts that will be helpful and practical to the housekeeper and cook who desires to prepare either a simple home luncheon or a more elaborate dish for the dinner party; thus attempting to answer to a certain degree the question, "What shall I have for the next meal, and how shall I prepare it?"
Dainty dishes suitable for the invalid and trays for the convalescent patient are included, prepared in the most nutritious and yet palatable way.
She has endeavored to give each receipt in the clearest and simplest manner, so that even an amateur at cooking can use the book with ease, thus suiting the needs of all, from the beginner to the more experienced housekeeper.
