First printed as a short pamphlet in 1699, this work by the celebrated diarist and man of letters, John Evelyn, is about growing and using salad herbs and salad vegetables, and was an early encouragement to eat more and better salads. It tells readers not only how to make the best salad dressing, but how to grow the plants themselves. The book is the first of a series of reprints of Evelyn's miscellaneous works on matters concerning gardening, estate management and cookery.
