Food safety is a key issue of the 1990s and development of the ideas presented here (the effective technologies that can prevent bacterial colonization during propagation) will lead to marketing of enteropathogen-free fresh poultry which will effectively reduce an important health hazard for consumers. This health hazard, gastrointestinal human disease, is associated with consumption of foods that are contaminated with Salmonella, Campylobacter, and Listeria E. Coli.
