The late great "Chef Louis" spills all the secrets of his acclaimed Chicago restaurant. The notes that accompany the recipes are worth having in their own right. On Radishes, Butter and Black Bread: "Four ordinary ingredients - bread, butter, salt and radishes - become a gourmet delight if eaten properly. First, spread some unsalted butter on a bite-sized piece of fresh bread that has a crust. The bread and butter should be chewed slowly. The radish [trimmed and quartered, with a bit of the leaf core and any tiny leaves intact] must be sprinkled with coarse salt, then placed in the mouth along with the green leaf core, and should be chewed slowly with the bread and butter. If you start with the radish, the effect will be entirely different, as it will be if you proceed by swallowing a bite of bread before taking a bite of radish." Postpaid.
