184 pages. English and Japanese. This rare cookbook represents one of the first formal infusions of Western cuisine into Japanese culture (and includes possibly the first illustration and instructions in the use of an ice cream maker in a Japanese cookbook). It was published by two women of the Woman's Missionary Society of the Methodist Episcopal Church. According to Friedrich von Wenchstern's "Bibliography of the Japanese Empire" (Tokyo, 1907), the book first appeared in 1904 and was available for the price of 40 sen. The 1906 Annual Report of of the Woman's Missionary Society reported that 1,000 copies of the 2nd edition were published sometime between October, 1905 and September, 1906. Since the purpose of the book was "to put into the hands of Japanese housewives a guide to foreign cookery which is simple, practical and hygienic," and because Binford and Ellis were actively engaged in teaching cooking and domestic science in Japan, nearly all copies of the early editions of were distributed in Japan. Binford included about 200 recipes in 20 topics covering all the meat-fruit-vegetable-desert and other cookbook staples. Some sample meals were also outlined, including Christmas dinner (keep in mind, the ladies were Christian missionaries). Ellis contributed a section on "Invalid Cookery," which covered a number of topics including nutrition, disease, and diet as well as recipes for the ill (albumenized fruit juice, temperance egg-nog, or flour ball gruel anyone?). While the recipes are presented in English and Japanese, the English portion, because it wasn't really intended for English speakers, only lists ingredients and not methods of preparation. This book was printed combining English left-to-right pagination and the Japanese method that starts from the righthand cover. English title and contents pages are included but what appears to be the first two pages of the Japanese end (including the title page, if there was one) appear to be missing. This copy saw sufficient use that the cover hinges split and the spine segment is missing. At some point long ago, the covers were strengthened with cellophane tape, now yellowed. The text block is age toned and has a couple of turned page corners and small edge nicks. We are grading this book as "Fair" because of the condition of the cover and the missing page/s, although the text block is more in the range of "Good" or better. Not ex-library (exlib), no former owner's signature (fos), no dedication/gift inscription, not book club (BCE/BOMC), not a digital reprint, not a CD/DVD copy, no remainder mark, no bookplate, no annotations or underlining/highlighting, no smoke odor, no etc. Domestic shipping includes delivery confirmation/tracking.
