Simone "Simca" Beck (1904-1991) was a French cookbook writer and cooking teacher who played a significant role in introduction of French cooking technique and recipes to American cooks. She is perhaps most famous for her collaboration with Julia Child & Louisette Bertholle in writing Mastering the Art of French Cooking. Simca's Cuisine is written "for those, no longer quite beginners, who adore to cook and partake of. the true French cuisine. Acknowledgments include Julia Child, James Beard, John Ferrone and many others. The contents are organized by occasion with appropriate menus & recipes. Contents: Informal Occasions; More Formal Occasions; Special Occasions; Other Favorite Dishes; Pot Pourri (basic recipes and notes). A friendly and informative narration introduces most of the menus. The Recipes are clear but assume some previous experience. Sample menu: (English Title) An Autumn Dinner After a Day in the Fresh Air - Chicken soup with garlic, cream, and basil, Braised pork stuffed with ham and mushrooms, Sauteed broccoli, Green salad vinaigrette, Assorted cheeses, Souffle with orange liqueur or Benedictine, Vin rouge de Bordeaux (wine). ; 8vo.
