There are two main types of diabetes mellitus. French people use the term thin diabetes (diabète maigre) to refer to type 1 diabetes: the severe, incurable form of diabetes mellitus that tends to strike children. If you have type 1 diabetes, it means that your pancreas cannot make enough insulin to keep you alive. French people use the term fat diabetes (diabète gras) to refer to type 2 diabetes: the milder, reversible form of diabetes mellitus that occurs in overweight people. If you have type 2 diabetes, it means that you are a naturally thin person. Your body is resisting the effects of insulin to keep you from gaining more weight.If left untreated, either type of diabetes mellitus causes high blood sugar. High blood sugar causes the signs of diabetes:
  • Too much urine
  • Severe thirst
  • Sugar in the urine
  • Weight loss
Surprisingly, people with any type of diabetes need to eat a diet that is high in carbohydrate (starch and sugars) and low in fat. Scientists have known since the 1930s that the more carbohydrate you eat, the more sensitive your body becomes to the effects of insulin. In contrast, fat makes the body less sensitive to the effects of insulin. By making the body sensitive to insulin, a high-carbohydrate, low-fat diet reverses type 2 diabetes and improves blood sugar control in people with type 1 diabetes. A low-fat, vegan (purely plant-based) diet is a time-tested approach for managing any type of diabetes. That kind of diet reverses type 2 diabetes and helps to improve the health of people with type 1 diabetes. It may even prevent most cases of type 1 diabetes. If an entire family adopts this diet for the benefit of a diabetic family member, everyone will benefit! This book explains how to use food to fight diabetes. It even includes meal planning tips and quick and easy recipes.
