From the Author: The Smart Kitchen was written with many different audiences in mind. Primarily it is directed to those who are creating a kitchen or improving an existing one. It contains ideas and information that will be helpful to owners, renters, remodelers, and builders. Additionally, professional designers and decorators, as well as anyone involved with energy, safety, the environment, or those with special physical needs, will find points of interest.
Though some concepts in The Smart Kitchen may be expensive to fulfill, others may cost nothing at all. Some will even pay for themselves.
In the introduction I describe the rationale and history of the Demonstration Kitchen, which was the genesis of this book. Parts I, II and III are its essence, providing the information needed to improve, design, and build a smart kitchen. Many chapters end with a section entitled "Environmental Choices," encompassing recommendations for people with product sensitivities or allergies, and for those wishing to create an environmentally friendly space. Part IV, on planning, brings all the material together and includes such aids as templates and graph paper. This part also contains a table of "Smart Kitchen Maintenance" to help keep the workplace safe and sound.
"Selected Resources," at the back of the book, is a compendium of products, publications, and organizations in the U.S., Canada, and England mentioned in the text or otherwise of interest. This is followed by an extensive bibliography for those who wish to do additional research.
There have been trends in kitchen design since the 1940s, but mostly superficial; the white kitchens of the 1950s did become the colorful kitchens of the 60s and 70s. (Too often the big question in the kitchen industry is what color will be the next rage.) Where there have been improvements in contemporary kitchens, they have been mostly in the area of small appliances. The blender, food processor, convection oven, and toaster/oven are examples of appliances that more than pay for themselves by simplifying the preparation of fresh foods without a loss of quality (contrary to microwaving). The only comparable innovation in major appliances are stove-top grills.
My interest in kitchen design has another motive: I'm concerned about the direction our eating habits are going and what this means in terms of personal and global health. I believe that one of the reasons for the declining interest in cooking is that our kitchens have not kept up with changes in life-style. This is one of the reasons for the success of the microwave oven: At least they reflect, for better or for worse, that people are beginning to view the preparation of food in a different light. If real cooking is to survive, kitchen design and appliances must be improved. Unless we adapt this workspace to contemporary needs, we will abdicate to mass producers one of the true pleasures of life and one of our most important sources of health: fresh food. We will be condemned to a "boil 'n bag" and "slit 'n serve" future.
I have spent the last seventeen years writing and lecturing in the area of food and nutrition with my wife, Nikki Goldbeck. As I see it, our contribution has been to help remove some of the impediments that keep people from eating well in today's world. The Smart Kitchen is another extension of this work. The kitchen can be friend or foe to the cook; an inhospitable workspace, like poor ingredients and badly tested cookbooks, is just another stumbling block.
