If there were anything in modern Mexico the Aztecs would recognise, food would certainly be one of them. Maize, particularly in the form of tortillas, tamales and beverages like atole, is consumed by all sectors of Mexican society today, just as it was in Aztec times. Mexican Roots: A Culinary Journey Through Time is a personal collection of recipes for producing traditional, authentic Mexican food. A unique blend of practical cookery, history, horticulture and travel, the book explores the history of products that have revolutionised world cuisine: maize, chillies, runner beans, pumpkins, tomatoes, avocados, maguey, cocoa, vanilla, pineapples, cotton and sunflowers among them. Together, these plants constitute Mexico’s great gift to humanity, though their place of origin is rarely acknowledged.
When Europeans first set eyes on the mighty Aztec capital of Tenochtitlán, they were astounded at the enormous variety of products on sale, most of which were completely unknown to them. At this time the inhabitants of Ancient Mexico were the greatest plant cultivators in the world. Far more valuable than the gold so readily sought by the Spanish conquistadors, were the plants and animals they took back to Europe with them. By dedicating each chapter to the history and cultural significance of one plant, Mexican Roots is an attempt to raise awareness of this contribution and to give credit where it is due.

In fact, most of us are unaware that they did not exist in Europe before the sixteenth century.
