Excerpt: Corn smut is a disease of maize caused by the pathogenic plant fungus Ustilago maydis. U. maydis causes smut disease on maize (Zea mays) and teosinte (Euchlena mexicana). Known in Latin America as huitlacoche, it is eaten, usually as a filling in quesadillas and other tortilla-based foods. In Mexico, corn smut is known as huitlacoche (, sometimes spelled cuitlacoche). This word entered Spanish in Mexico from classical Nahuatl, though there is debate as to which Nahuatl words huitlacoche derived from.
